The farm is our main activity: before the farm stay, there is the work we do every day. Three souls that have belonged together for generations — livestock, land and alpine pasture.
The farm
Everything begins with the land and the herd.
Milk, cheeses, meat, fruit and vegetables do not come from far away: they are produced here, between Gressan, Coassod and the alpine pasture in Valgrisenche. It is this bond with the land that gives flavour to our table.

The herd.
Valdostana Castana and Pie Rouge cattle.
Caring for the herd shapes our days: milking, feeding and looking after each animal. Their milk becomes Fontina, fresh cheeses, yogurt and butter; our meat becomes the dishes served in our kitchen. In the new wooden barn, next to the dairy room, we transform every day what the herd gives us.

02 · Agriculture
The land.
Vegetable garden, orchard and vineyard: what grows here is served on your table.
One thousand square metres of Golden Delicious apple trees, a small vineyard in Gressan, the vegetable garden and the meadows of our farm. We grow seasonal vegetables, harvest peaches, strawberries and grapes, and care for the meadows that become hay for the herd in summer. A cycle that completes itself, year after year.

03 · Alpine pasture
The alpine pasture.
Every summer, the herd moves up to Arp Vieille, at 2,200 metres, at the foot of the Rutor glacier.
From June to early October, we live at the alpine pasture in Valgrisenche, just as our grandparents always did. It is here, with milk from the high pastures, that our Fontina PDO d’alpage is made, awarded the “Modon d’Or” 5 times as the best Fontina PDO d’Alpage. A flavour that speaks of grass, altitude and the slow time of ageing.
